Gajar ka Halwa (Carrot Halwa)

GAJAR KA HALWA IS POPULAR CARROT-BASED SWEET PUDDING ORIGINATED IN INDIA. IT IS USUALLY MADE DURING WINTERS WITH FRESHLY GRATED RED CARROTS, MILK, GHEE, SUGAR AND NUTS.

It is a famous dessert, cooked at least once in almost every Indian home during winters. The traditional gajar ka halwa is made by slowing cooking grated carrots and full cream milk, but nowadays people have started adding other ingredients like cream, khoya (mawa), milkmaid, etc.

This delicious dessert is not very difficult to cook but yes, it requires some effort and time. In this recipe, I am going to share my mother’s traditional way of making gajar ka halwa with only one shortcut.

The whole step by step process with images is discussed below:-

Ingredients:-

  1. Red Gajar/Carrot – 4-5 grated
  2. Ghee – 1-2 tbsp
  3. Full cream milk – 1 packet (500ml)
  4. Sugar – to taste
  5. Nuts

Method:-

  1. Wash the carrots and peel it.

2. Grate the carrots manually or in a food processor.

3. Now, in a heavy bottom pan or kadhai, add ghee and heat it.

4. Once the ghee is warm (don’t overheat), add the grated carrots.

6. Cover it with a lid and cook for about 15-20 minutes, until the carrot gets cooked and becomes soft.

7. Keep stirring at regular intervals.

8. While the carrot is being cooked, take another vessel and start boiling the full cream milk. (in this way it will take you less time to prepare this yummy halwa)

Note: – If you will mix the milk and carrot initially, then the excess water from the carrots will make the milk thinner and it will take a longer time to cook. But if you like it that way then, you can mix & cook both milk and carrot together. It is purely your choice.

  1. After 15-20 minutes when the carrot softens, add the boiled milk and mix well.

10. Cook for another 15-20 minutes until the milk gets totally absorbed.

11. Stir at regular intervals so that it doesn’t get stuck at the bottom.

12. When the halwa is almost cooked, add the sugar and mix well.

13. Continue to cook on low flame until the mixture thickens and reduces more. You will see that the color will also change and a good reddish color will appear. Stir at regular intervals.

14. When you see that the halwa has thickened and reduced much, that’s the time you know that your delicious Gajar ka Halwa is ready.

15. Add nuts and server hot.
